Step-by-Step Instructions
  1. Start by pitting the Medjool dates and chopping the dried apricots into small pieces.
  2. In a food processor, combine the pitted dates, chopped apricots, chia seeds, and cinnamon. Pulse for 1-2 minutes until sticky.
  3. Transfer the mixture to a mixing bowl and stir in the raw pumpkin seeds and white chocolate chips.
  4. Line a baking dish with parchment paper and press the mixture down firmly into an even layer.
  5. Chill in the refrigerator for at least 30 minutes to firm up.
  6. Remove from the baking dish, cut into bars, and store in an airtight container in the fridge.
