  • 100 ml Water Adjusts sauce consistency.

Method
 

Step-by-Step Instructions
  1. In a bowl, combine chili bean paste, light soy sauce, dark soy sauce, Shaoxing wine, black vinegar, sugar, and water. Whisk together until smooth.
  2. Gently pat your whole fish dry and season generously with salt and pour Shaoxing wine over the fish. Let marinate for about 15 minutes.
  3. Prepare a steamer basket and place the marinated fish inside. Steam over high heat for 5-10 minutes until opaque and flaky.
  4. Heat a tablespoon of cooking oil in a skillet over medium heat. Add minced garlic, ginger, chopped green onions, and dried chilies, stirring until fragrant.
  5. Pour the prepared sauce mixture into the skillet with the aromatics. Allow it to simmer for 2-3 minutes until it thickens.
  6. Carefully transfer the cooked fish to a serving plate and pour the sauce over the top. Garnish with additional green onions.
