Ingredients

For the Bites
  • 2 medium Cucumber Choose medium-sized cucumbers for perfect slicing.
  • 8 ounces Smoked Salmon Use high-quality smoked salmon for the best flavor; consider smoked trout as an alternative.
  • 8 ounces Cream Cheese Acts as the creamy base; can also be substituted with ricotta for a lighter option.
  • 2 tablespoons Spring Onion Provides a mild onion flavor; feel free to swap with chives or green onions.
For the Herb Mixture
  • 2 tablespoons Fresh Chives Enhance flavor and presentation; dill is a great alternative for a different taste profile.
  • 1 tablespoon Lemon Juice Adds brightness and acidity to balance the dish; lime can work in a pinch.

Step‑by‑Step Instructions for Cucumber Smoked Salmon Bites
  1. In a medium bowl, combine softened cream cheese, finely minced spring onion, chopped chives, lemon juice, lemon zest, and freshly cracked black pepper. Blend until smooth and creamy.
  2. Slice cucumbers into rounds about half an inch thick and pat dry with a paper towel.
  3. Spread a generous dollop of the herb cream cheese mixture onto each cucumber slice.
  4. Place a piece of smoked salmon on top of each cucumber slice, allowing the salmon to drape slightly over the edges.
  5. Sprinkle each bite with a pinch of freshly cracked black pepper and garnish with extra chives or a drizzle of lemon juice if desired.
  6. Chill the assembled bites in the refrigerator for about 10 minutes, then serve immediately.
