- In a wide, shallow bowl, whisk together the eggs, water, sea salt, and black pepper until smooth.
- Dip a rice paper sheet into the egg wash on both sides and lay it flat. Overlap two more sheets slightly. Scatter grated Parmesan cheese in the center and distribute the spinach and feta filling. Roll tightly into a log shape and twist into a spiral, sprinkling with sesame seeds.
- Place assembled spirals in an air fryer at 220°C and cook for 12-15 minutes until golden and crisp.
- Squeeze fresh lemon juice over the spirals before serving. Pair with tzatziki.
