  • 180 g Greek Feta Feel free to use goat cheese instead.
  • ¼ cup Parmesan Cheese Nutritional yeast is a dairy-free option.
  • Black Pepper Season to taste.

  • 3 Eggs Flax eggs can be a vegan alternative.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine chopped baby spinach, finely sliced spring onions, and parsley. Sprinkle in the dried oregano and thyme, followed by the diced feta cheese. Season with sea salt and black pepper to taste. Mix and mash until well combined.
  2. In a wide, shallow bowl, whisk together the eggs, water, sea salt, and black pepper until smooth.
  3. Dip a rice paper sheet into the egg wash on both sides and lay it flat. Overlap two more sheets slightly. Scatter grated Parmesan cheese in the center and distribute the spinach and feta filling. Roll tightly into a log shape and twist into a spiral, sprinkling with sesame seeds.
  4. Place assembled spirals in an air fryer at 220°C and cook for 12-15 minutes until golden and crisp.
  5. Squeeze fresh lemon juice over the spirals before serving. Pair with tzatziki.
