  • 1 tablespoon Lemon zest
  • 1 teaspoon Black pepper Freshly ground recommended.
For the Pastry
  • 1/4 cup Olive oil For brushing.
For the Chili Honey Drizzle
  • 1/2 cup Honey
  • 1 teaspoon Chili flakes
  • 1 tablespoon Lemon juice

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine crumbled feta cheese, fresh dill, mint, lemon zest, and freshly ground black pepper.
  3. Unroll the phyllo pastry and lay out two sheets, brushing each with olive oil.
  4. Cut phyllo into strips about 4 inches wide and place a tablespoon of feta filling at one end of each strip.
  5. Roll the phyllo over the filling tightly to form a cylinder.
  6. Place the rolls seam-side down on the prepared baking sheet, spaced apart.
  7. Brush the tops of the rolls with olive oil before baking.
  8. Bake for 18–20 minutes or until golden and crispy.
  9. In a small saucepan, warm honey, chili flakes, and lemon juice over low heat.
  10. Drizzle the warm chili honey over the baked rolls or serve on the side.
