- Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, fresh dill, mint, lemon zest, and freshly ground black pepper.
- Unroll the phyllo pastry and lay out two sheets, brushing each with olive oil.
- Cut phyllo into strips about 4 inches wide and place a tablespoon of feta filling at one end of each strip.
- Roll the phyllo over the filling tightly to form a cylinder.
- Place the rolls seam-side down on the prepared baking sheet, spaced apart.
- Brush the tops of the rolls with olive oil before baking.
