Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Roll out the thawed puff pastry sheets on a lightly floured surface to even thickness of about 1/8 inch.
  3. Cut the rolled-out pastry into eight equal squares.
  4. Beat together the egg and a splash of milk in a small bowl for the egg wash.
  5. Layer one square of puff pastry with slices of ham and cheese; optionally spread Dijon mustard on the pastry.
  6. Sprinkle salt, pepper, and fresh herbs as desired over the filling.
  7. Place another pastry square on top and crimp the edges with a fork to seal.
  8. Brush the tops of the stacks with the egg wash.
  9. Place the assembled stacks on the prepared baking sheet with space in between.
  10. Bake for 20-25 minutes until golden brown and puffed up.
  11. Let cool for a few minutes before serving.
