- Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Roll out the thawed puff pastry sheets on a lightly floured surface to even thickness of about 1/8 inch.
- Cut the rolled-out pastry into eight equal squares.
- Beat together the egg and a splash of milk in a small bowl for the egg wash.
- Layer one square of puff pastry with slices of ham and cheese; optionally spread Dijon mustard on the pastry.
- Sprinkle salt, pepper, and fresh herbs as desired over the filling.
- Place another pastry square on top and crimp the edges with a fork to seal.
- Brush the tops of the stacks with the egg wash.
- Place the assembled stacks on the prepared baking sheet with space in between.
- Bake for 20-25 minutes until golden brown and puffed up.
- Let cool for a few minutes before serving.
