Method
 

Steps
  1. Preheat your oven to 400°F, or 425°F for an even crispier finish. Line a baking sheet with parchment paper or place a wire rack on top.
  2. Pat the chicken thighs dry with paper towels, sprinkle baking powder and half of the kosher salt evenly over, and let rest for 10-15 minutes.
  3. Drizzle with olive oil and rub the spice mixture over the chicken, ensuring coverage under the skin.
  4. Place seasoned chicken skin-side up on the baking sheet and bake for 30-35 minutes until golden brown and an internal temp of 165°F is reached.
  5. Mix BBQ sauce with apple cider vinegar while the chicken is baking, adjusting for taste.
  6. Brush BBQ sauce mixture over each chicken thigh and return to bake for an additional 10-15 minutes until internal temp is 175°F-185°F.
  7. Broil for 1-3 minutes until the glaze is bubbly and caramelized, keeping a close eye to avoid burning.
  8. Let rest for 5 minutes before serving to allow juices to redistribute.
