Preparation Steps
  1. Prepare the 'Honey' Mustard Sauce by whisking together neutral oil, agave or maple syrup, and mustard until smooth. Season with salt and pepper to taste.
  2. Drain and press extra firm tofu for at least 20 minutes, then slice into 1-inch strips.
  3. In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and optional paprika. Gradually whisk in water until smooth.
  4. Dip each tofu strip into batter, coat in panko breadcrumbs, pressing gently for an even coating.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and arrange tofu strips in a single layer. Bake for 30-35 minutes, flipping halfway.
  6. Brush the baked tenders with the prepared 'honey' mustard sauce and return to the oven for an additional 5-8 minutes.
