Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Crush the graham crackers into fine crumbs and mix with melted butter and sugar. Press into the bottom of a springform pan and bake for 10 minutes. Cool.
  2. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, vanilla extract, and lemon zest. Mix in eggs one at a time.
  3. Whip the heavy cream to stiff peaks and fold into the cream cheese mixture carefully.
  4. Pour the cream cheese filling over the cooled crust and smooth the top.
  5. Bake at 325°F (160°C) for about 60 minutes until the center jiggles slightly. Cool completely.
  6. Refrigerate overnight to allow the flavors to meld and the texture to set.
  7. Blend fresh strawberries with sugar for the glaze and pour over the chilled cheesecake before serving.
