Baking Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, melt butter and let it cool slightly. Combine with eggs, milk, orange zest, juice, and vanilla.
- Pour the wet ingredients into the dry ingredients and gently fold together until just mixed.
- Fold in the cranberries and pecans until evenly distributed.
- Spoon the batter into muffin cups, filling about three-quarters full.
- Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
- Cool for 5 minutes in the tin before transferring to a wire rack.
