Step-by-Step Instructions
  1. In a mixing bowl, combine fresh cranberries, orange juice, brown sugar, soy sauce, minced garlic, and grated ginger. Marinate chicken for at least 30 minutes.
  2. While the chicken is marinating, preheat your oven to 375°F (190°C) and prepare a baking dish with olive oil.
  3. Remove the chicken from the marinade and place it in the greased baking dish, reserving the marinade for basting.
  4. Bake for 20 minutes, basting with the reserved marinade at the 10-minute mark.
  5. Check the internal temperature, it should read 165°F (74°C). Continue baking for an additional 5-10 minutes if necessary.
  6. Let it rest for a few minutes before slicing. Garnish if desired and serve warm.
