- Start by unrolling the thawed puff pastry onto a clean, lightly floured surface. Smooth out any creases with your hands.
- Blend the cream cheese until smooth in a medium bowl. Add crumbled feta cheese and chopped herbs, mixing until combined.
- Spread the cream cheese mixture evenly across the puff pastry, leaving a ½-inch border. Sprinkle cranberries over the mixture.
- Roll the pastry tightly from one long edge into a log shape. Slice into ½-inch thick pieces.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the pinwheels and brush with beaten egg.
