  5. Scatter chopped fresh herbs over the filling to enhance flavor.
  6. Roll the pastry tightly from one long edge into a log shape, sealing the seams.
  7. Slice the rolled pastry into 1-inch pieces and arrange them cut side up on the lined baking sheet.
  8. Whisk together an egg and a splash of water for the egg wash, and brush it over the tops of the pinwheels. Bake for 18-22 minutes until golden brown.
