Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or butter.
  2. Whisk the large eggs in a mixing bowl until well blended and frothy, about 1-2 minutes.
  3. Add the cottage cheese to the egg mixture and stir gently until smooth.
  4. Incorporate the shredded cheddar cheese, chopped spinach, and red bell pepper, ensuring even distribution.
  5. Add garlic powder, onion powder, salt, and black pepper, stirring well to incorporate evenly.
  6. Dissolve the baking powder in a teaspoon of water and fold this bubbly mixture into the egg mixture.
  7. Pour in the olive oil and mix until smooth.
  8. Fill the muffin cups three-quarters full with the egg mixture.
  9. Bake for 18 to 20 minutes until golden brown and puffed. A toothpick should come out clean.
  10. Let the bites cool in the tin for 5 minutes, then run a knife around the edges and remove.
