- Whisk the large eggs in a mixing bowl until well blended and frothy, about 1-2 minutes.
- Add the cottage cheese to the egg mixture and stir gently until smooth.
- Incorporate the shredded cheddar cheese, chopped spinach, and red bell pepper, ensuring even distribution.
- Add garlic powder, onion powder, salt, and black pepper, stirring well to incorporate evenly.
- Dissolve the baking powder in a teaspoon of water and fold this bubbly mixture into the egg mixture.
