- Start by bringing a pot of water to a rolling boil. Add the fresh corn kernels and cook for about 5 to 7 minutes until they are tender yet crisp. Once done, drain the corn in a colander and allow it to cool completely.
- In a large mixing bowl, add the cooled corn along with diced cucumber, halved cherry tomatoes, and chopped red onion. Use a spatula to gently fold the ingredients together.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until the mixture is smooth and creamy.
