Step-by-Step Instructions
  1. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 5-7 minutes until golden brown.
  2. Prepare Vegetables: Chop garlic, onions, carrots, and potatoes into even pieces and set aside.
  3. Combine Ingredients: Layer seared chicken and prepared vegetables in the slow cooker. Pour in chicken broth and milk, and sprinkle salt, pepper, thyme, and rosemary.
  4. Thicken the Stew: Mix all-purpose flour with a few tablespoons of liquid from the slow cooker, then stir it back in to thick the stew.
  5. Set Cooking Time: Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
  6. Add Peas: Stir in green peas when there are 30 minutes left to cook, allowing them to warm through.
  7. Serve: Taste and adjust seasoning, then ladle stew into bowls and enjoy with warm bread or salad.
