Step-by-Step Instructions
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 5-7 minutes until golden brown.
- Prepare Vegetables: Chop garlic, onions, carrots, and potatoes into even pieces and set aside.
- Combine Ingredients: Layer seared chicken and prepared vegetables in the slow cooker. Pour in chicken broth and milk, and sprinkle salt, pepper, thyme, and rosemary.
- Thicken the Stew: Mix all-purpose flour with a few tablespoons of liquid from the slow cooker, then stir it back in to thick the stew.
- Set Cooking Time: Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
- Add Peas: Stir in green peas when there are 30 minutes left to cook, allowing them to warm through.
- Serve: Taste and adjust seasoning, then ladle stew into bowls and enjoy with warm bread or salad.

Notes
For the best flavor, always sear chicken first and make sure vegetables are cut uniformly for even cooking.
