  • 4 fillets Salmon choose fillets with a vibrant pink hue and moist texture

  • to taste Pepper essential seasoning
For the Spinach Mixture
  • 2 cups Spinach thawed and drained
  • 1 medium Onion finely sliced
  • 2 cloves Garlic minced
  • 1/2 cup Sour Cream can be substituted with Greek yogurt
For the Topping
  • 1 cup Mozzarella Cheese shredded
For Cooking
  • 2 tablespoons Olive Oil for sautéing

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a large skillet over medium heat. Add sliced onion and sauté for about 3-4 minutes until translucent.
  2. Add minced garlic and cook for 30 seconds, stirring frequently.
  3. Add thawed spinach to the skillet and cook for 2-3 minutes until heated through. Season with salt and pepper and fold in sour cream.
  4. Preheat oven to 175°C (347°F). Season salmon fillets with salt and pepper and sear for about 2 minutes on each side until golden brown.
  5. Lay seared salmon fillets skin-side down in a greased baking dish. Spoon spinach mixture over each fillet and top with shredded mozzarella.
  6. Bake in the preheated oven for 15-20 minutes until salmon is opaque and cheese is bubbling.
  7. Let the dish rest for a few minutes before serving.
