Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. In a saucepan over medium-low heat, melt ½ cup of unsalted butter and add 4 oz of white chocolate until completely melted.
  3. In a mixing bowl, whisk together 2 eggs, ¾ cup granulated sugar, and ½ cup light brown sugar for 6-8 minutes.
  4. Add ½ tsp of vanilla extract, 1½ tsp of ube extract, and ¼ cup of ube halaya to the egg and sugar mixture, then add the melted chocolate.
  5. In a separate bowl, whisk together ½ tsp of salt, 1 tsp of baking powder, and 1½ cups of all-purpose flour. Gradually add to the wet ingredients.
  6. Using a medium cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 3 inches apart.
  7. Bake for 10 minutes, then slam the baking sheets against the counter before returning them to bake for an additional 2 minutes.
  8. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
