  • 1 can Ro-tel Diced Tomatoes & Green Chilies
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn can use frozen corn
For the Finish
  • 1 teaspoon Smoked Paprika
  • 1 cup Mexican Cheese Blend optional for dairy-free
  • 1 tablespoon Fresh Cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and slice the chicken breasts into thin cutlets. Season with garlic powder, chili powder, salt, and pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken cutlets and cook for 3-4 minutes on each side until golden brown.
  3. Remove the chicken, add chopped onion to the skillet and sauté for about 5 minutes until translucent.
  4. Add the Ro-tel tomatoes, black beans, and corn with smoked paprika. Stir and cook for about 2 minutes until heated through.
  5. Return the chicken to the skillet, cover with the vegetable mixture, and sprinkle cheese on top.
  6. Transfer the skillet to the oven and bake for 5-7 minutes until the chicken is cooked through and cheese is bubbly.
  7. Garnish with fresh cilantro and serve directly from the skillet.
